For reference, I use a Masterbuilt 560 Charcoal Grill + Smoker. This is a gravity fed charcoal smoker, and you can mix in wood chunks in the charcoal chute, or add them at regular intervals into the ash bin as you're smoking. I chose this model as it has a fan that helps control the temperature which can be set on the grill itself, or remotely via an app that pairs with the grill. This is perfect for longer smokes as I'm not required to constantly feed the smoker or regulate the temperature overnight, without sacrificing anything. I may love a good pulled pork, but I'm too old to be staying awake for nearly 20 hours to get it.
